  
What is Tea?
Like cast iron cookware, tea also has its own fair share of
history. Tea originated in China during the ancient times. It has been introduced to different countries like
Japan and until now that it becomes one of the most popular beverages across the world. Whether we speak
about green tea, black tea, white and oolong tea, they all come from one plant known as the Camellia sinensis,
or Thea sinesis found before the great ice age. There are three main varieties of Camellia sinensis: the China
type, the India (Assam region) type, and the Hybrid type (a cross breed of the China and India types).
The China type tea plant is known to have small leaves and is usually
found mostly where the altitude is higher. The India or Assam type has larger leaves and cultivates best at
lower elevations and the Hybrid falls someplace in between the China and India types. The four major types of
tea include: black tea, oolong tea, white tea and green tea. Fascinatingly, all these teas come from the raw
leaves of the same tea plant, Camellia sinensis. The reason why it has different types is due to the
process and fermentation. Some teas are made fully fermented, streamed and other are fried.
Tea drinking is popular in all countries. In Japan tea
ceremonies are in fact part of their culture. This ritual is only presented by the professionals and
experts and only families with higher status in the society can experience this ceremony. Since the teapots
and kettles used are expensive, common people can't afford to buy them. The tea ceremony also needs to
be held at a calm and quiet place to fully experience the spiritual process of tea drinking.
According to history, tea is the oldest cultivated plant since it has been harvested for over
1000 years now. The soil, altitude and weather also vary the types of tea leaves. It is important to learn the proper process especially if you
are planning to have tea houseplants. If the leaves are right away dried and then heated (steamed) or fired, the
tea leaves stay green, keeping the unique flavors and health benefits green teas are celebrated for. Green tea
is very popular especially in China since it is known to have medicinal benefits. A lot of Chinese believe
that regular drinking of green tea decrease the risk of having cancer.
